A recipe for when the world is too chaotic and going back to the simple things is necessary.
Ingredients:
250g spelt flour
4 big bananas
1 tsp cinnamon powder
2 tsp baking powder
1\2 tsp baking soda
1\4 tsp salt
50g nuts of choice ( almond, Brazil nuts, hazelnuts)
1 tsp vanilla essence
45 g coconut sugar
80 g almond or any other plant milk of choice
90 g coconut oil
120 g dark chocolate
Method:
Preheat the oven to 180°.
In a bowl add flour, baking poiwder, baking soda, cinnamon powder, salt, chopped chocolate and, chopped nuts.
In another add bananas, milk, coconut oil, vanilla, and coconut sugar. You can either mash the mix with your hands leaving chunks of banana or blend the mixture in a high-power blender or with an immersion blender.
Pour the dry over the wet ingredients, and mix gently till fully combined.
Pour the batter into a loaf tin and bake at 180° for 45-50 minutes depending on your oven.
