Soft Crêpe Rolls With Peanut Butter And Jelly Filling

NUT ALLERGY – SERVES 4 

These crêpes are the perfect middle between a soft pancake and a crêpe. They come together in no time and they are so good.

I legit had to make this recipe twice and hide them from my sister to be able to take a few pictures.


Ingredients

120 g spelt flour 

2 tbsp proud flax seeds

2 tbsp maple syrup 

1 1\2 tsp baking powder

290ml milk of choice 

Coconut or vegetable oil of choice to cook. 

Peanut butter 

Blackberry jam 

Banana 

Method

In a bowl sieve the flour. Add the flax and baking powder and combine. 

Lastly add the liquids, milk, and maple. Stir to combine. 

Heat a pan on medium heat, coat the bottom with a little oil then pour the batter. Cook until bubbles will start to appear then flip and, cook further 1 minute until nice and golden. 

When ready you can play around in multiple ways. Peanut butter, jam, and banana is delicious, as well as tahini, peaches, and mint with extra maple for a summer version.
