Buckwheat Galette With Apples And Blackberries

NUT FREE – SERVES 8

Galettes are one of my favorite desserts to make. They are so quick, hard to mess up and so easy to customize.

The best fillings has to be fresh fruit. I have a few different versions coming up. Hope you’ll enjoy it.


Ingredients

160g white spelt

40 g buckwheat flour

50 ml plant milk of choice or water 

80 ml olive oil 

1 pinch of salt

180 g blackberry jam 

1 tsp cinnamon

1 small apple sliced

Juice of 1\2 lemon 

Method

In a bowl combine flour, salt, olive oil, and milk. Mix with a wooden spoon until you’ll have a dough that stays together. Try not to knead the dough but put the ingredients together. You also can use a mixer to combine the ingredients. 

Let the dough rest for 10 minutes. In the meanwhile wash and slice the apple thinly and cover it with the lemon juice. 

Roll out the dough with the rolling pin. You should get a circle of about 26-30 cm of diameter. Add the cinnamon to the jam, mix it and place it in the middle of the dough. Spread it leaving 4 cm free on the edges. Place the apples nicely on top along with any remaining juice. Fold the corners of the dough towards the center and transfer to the oven. Bake at 180C for 25-30 minutes or until golden on the edges. 

You can sprinkle with toasted coconut flakes or flaked almonds before serving.
